St. Elizabeth Rose (d. 1130) was a Benedictine abbess, the foundress of the convent of Sainte-Marie-du-Rozoy, near Courtenay, Loiret, France. Eventually she retired to live as an anchoress in a hollow oak tree.

St. Elizabeth please pray for us to be content with the simple things in life.
